Today I am grateful for interesting wraps. I think I live in the best diner in town. I’ve been making a concerted effort to eat healthier, which means buying healthier food and preparing it myself. And I am very creative in the kitchen, often wishing I had written the ingredients for a great meal down so I could repeat it. But that would be no fun. How could I surprise me?
What’s cool about doing it myself that I can cram as many vegetables of as many different varieties into a single wrap and not get charged extra. I have learned the best way to roll an over-stuffed concoction is to lay it on press ’n seal plastic wrap and tuck it in as you go. You have to be careful to not let the plastic get inside, which is a trick, but otherwise it works well. Then just cut through the wrap in the middle of the sandwich, leaving the plastic on both ends and it holds together when you eat it.
I’ve got interesting “wraps” in my car, in my closet, on my shelf and now also on my plate. I like the eating ones best!
